Cheater "Almond" Cookies- Like Biscotti

It's so interesting how certain foods have the ability to evoke certain memories and feelings in people. For me, these "almond cookies" cause me to feel all warm and fuzzy inside. They were my dad's favorite cookies, and seeing my mom making the effort to make his favorite cookies must have made me feel some love in the air.
These cookies are similar to biscotti, but are a drop heavier. Their official name is almond cookies because they were traditionally made that way, but many almond free variations have evolved. In the spirit of frugality and availability, I usually make almond free "almond cookies", hence the name "cheater 'almond' cookies". 
These cookies are a little more work than your standard cookie, but trust me, they're worth it. Best of all, they call for no special ingredients, making them the perfect thing to whip up when you want something yummy but don't have any "cookie ingredients".

Cheater  "Almond" Cookies

Ingredients:
3 eggs
3/4 cup oil
1 cup sugar
3 cups flour
1/4 tsp salt
1 tsp baking powder
1 tsp almond extract (optional)
1 cup chocolate chips (optional)
Cinnamon and sugar mix (optional)

Instructions:
1. Preheat oven to 350.

2. Mix together eggs, oil, and sugar (and almond extract if desired).

3. Add flour, salt, and baking powder. Mix well.

4. If using chocolate chips, mix them in.

5. Form the dough into long semi thin snakes on a lined baking tray.

6. Bake the cookies for 20-25 minutes, watching carefully that they don't burn.

7. Remove the cookies from the oven. Carefully, making sure not to burn yourself, cut thin slices (approximately 1 inch) of the cookie, and then turn them on their side.

8. If you're using cinnamon and sugar, sprinkle the cookies with your mixture.

9. Return the cookies to the oven to make for another 10 minutes.

10. Remove from the oven, let them cool down, and enjoy your delicious cookies!
