Tuna Vegetable Sauce Recipe
IngredientsOil or butter for frying
2 onions
3-4 carrots
1 pepper
1 can tuna in brine with liquid
2 cups water
2 heaping tablespoons tapioca/potato/corn starch or arrowroot powder
2 tsp garlic
3 tsp salt
1/2 tsp pepper
1 heaping tablespoon paprika
1 heaping teaspoon smoked paprika (optional)
Instructions
1. Chop onions and saute in oil or butter until golden.
2. Peel carrots and toss the peels. Using your peeler, peel the rest of each carrot into thin ribbons.
3. Chop your pepper, and add that and your carrot peelings into the pan, keeping the fire on a medium/high heat.
4. Once all the vegetables are softened, mix one cup of cool water with your 2 heaping tablespoons of starch and mix well. Pour that cup into the pan along with another cup of water and mix well.
5. Open a can of tuna fish, and pour the can together with its liquid into the pan. Mix well.
6. Season with paprika, smoked paprika, garlic, salt, and pepper, adjusting seasonings more or less to taste.
7. Mix regularly until the sauce thickens.
8. Serve the sauce over your rice, mashed potatoes, pasta, or whatever else you desire.
