Indian Style Tomato Soup Recipe- Vegan, Paleo, and Easy

I don't know what it's like where you live right now, but over here in my neck of the woods it is currently freezing, making it perfect soup weather! I am making an Indian themed meal and was looking for the perfect soup to complement the meal, but didn't want something curry like since I had so many other curried dishes, so I did some googling for recipes and this soup is based on a bunch of different Indian soup recipes, which I've now made my own. It's pretty easy to make, and is suitable for a variety of diets, and everyone who's tasted it so far agrees with me that it is delicious.

Indian Style Tomato Soup Recipe- Vegan, Paleo, and Easy

Ingredients:
1 large onion
4-6 cloves garlic
2 tablespoons oil
2 teaspoons cumin
3 teaspoons dried ginger
2 large carrots
2 1/2 teaspoons salt (or to taste)
2 cups tomato paste (stick to sugar free tomato paste to keep this Paleo)
10 cups water
1 1/2 teaspoons cinnamon
1 1/2 teaspoon garlic powder (optional)

Instructions:
1. Dice the onion and carrots and mince the garlic.

2. Saute the onions and garlic in a deep pot with oil.

3. Add the cumin, ginger, and carrots and saute until fragrant.

4. Add at least 2 cups of the water to the pot (you can add all the water now, but it will make it harder to mix in the tomato paste later) and then boil until the carrots are soft.

5. Add the rest of the ingredients, mix well, and cook for an additional 10 minutes.

    1. Wow, what a great idea! I prepare soup for Lent at our church for our soup suppers, and I provide the vegetarian option... now our vegans will feast along with the vegetarians!

      I just wanted to make sure that it was indeed 2 cups of tomato paste that's needed? It did seem like a lot so I thought I'd ask just to make sure before I made this.

    3. Yes, two cups of tomato paste. To ten cups of water, mind you. It makes a large pot of soup. If you're not sure, because of the amount, you can cut it in half.
