Easy Dairy Free Vanilla Cake Recipe, With No Expensive Ingredients or Equipment


Today I made a birthday party for my daughter, more on that in another post, and for the party cake I wanted something quick and easy. Though I have a terrific gluten free vanilla cake recipe that I've made in the past, this time I wanted to try a cake with gluten, because I wasn't sure if the kids coming would appreciate gluten free cake anyhow, and I was running low on my gluten free flours.

I searched the internet to try to find a good vanilla cake recipe (vanilla cake is so much harder to make well than chocolate, I've discovered) but all the recipes seemed to call for butter (which I didn't have at home and didn't want to use anyhow) or sour cream or buttermilk or a variety of other specialty expensive ingredients. I just wanted plain old boring vanilla cake. And dairy free. So I found this recipe, and tweaked it to make it dairy free. And without needing a mixer. Just an easy cake.

Since I can't taste this since I don't eat gluten, I can't tell you what I think of it. But everyone enjoyed the cake, though my kids said that my gluten free vanilla cake is better, and with frosting this was pretty good, but they felt it needed frosting. So I'm not claiming that this is the best ever vanilla cake, but its a decent enough cake that is quick to throw together and has cheap ingredients too. Easy Dairy Free Vanilla Cake Recipe, With No Expensive Ingredients or Equipment

Ingredients:
3 cups wheat flour
1 tablespoon baking powder
1/2 teaspoon salt
4 medium eggs
2 cups sugar
1 teaspoon vanilla (I left this out and it was totally fine)
3/4 cup oil
1 1/4 cup water

Instructions:
1. Mix eggs and sugar, beat with a whisk for a minute.

2. Add the oil and vanilla, and mix it in.

3. Add the flour, baking powder, salt, and water. Mix until smooth.

4. Place in a 9x13 baking pan and bake at 350 for 55 minutes or until a toothpick inserted in the center comes out clean.

5. Ideally frost before serving.
