Delicious and Easy Sweet Cheese Pancakes Recipe


This recipe is very different from most recipes I post. First of all, I never tasted this. Secondly, it isn't particularly frugal or particularly healthy.  Nor is it gluten free, dairy free, or egg free (it's all those, basically). But I made it yesterday for my kids for lunch and they devoured it, and told me that I have to share it here on my blog. This is high in protein, and since I got the cheese free, it was frugal for me as well. They make soft pancakes that hold together well. My kids told me they were less sweet than cheesecake (the flavor I was going for) but sweeter than regular pancakes.

Note, this is quite a large recipe; if your kids are less famished than mine, or if you're a smaller family, you might want to halve this recipe, or even make just a third.

Delicious and Easy Cheese Pancakes Recipe

Ingredients:
3 cups/3 containers ricotta cheese, cottage cheese, or quark cheese
4 eggs
3 cups flour of choice
2 cups water
1 cup sugar (or less if you want to keep it healthier)
2 teaspoons vanilla extract
1 1/2 teaspoon baking powder
1/2 teaspoon salt
Oil as needed

Instructions:
1. Mix all the ingredients together other than the oil.

2. Whisk well to ensure no clumps.

3. Fry on an oiled and/or non stick griddle or skillet. Fry until edges start getting golden, then flip over and fry on the other side. Note that this is a looser pancake, so don't wait for it to solidify 100% before flipping.

Enjoy! No need for any toppings, they're delicious as is.

  3. I've been making a version of this for years but using less ingredients. They are delicious!!!
    The recipe is from Doris Janzen Longacre's More with Less cookbook. They are called High Protein Pancakes which is a big plus in my book.

    1 cup cottage cheese (she says creamed but any works)
    4 eggs
    1/2 cup flour
    1/4 tsp salt
    1/4 cup oil
    1/2 cup milk
    1/2 tsp vanilla
    Blend at high speed 1 minute and cook in skillet as usual pancakes. Can be waffles too. So easy,so good!

  4. Thank you for the recipe, I had cottage cheese so I made them for my mother and myself today, with gluten free flour. They were delicious!
