Easy Scallion Rice Recipe- Gluten Free, Vegan, Soy Free


I am always looking for things to do with leftover rice. Last week I had some rice that not only was left over, it was starting to dry out. I needed to make a starchy dish for a meal, and since I had a lot of scallions at home, I decided to check the internet to see if a dish such as scallion rice exists, and what types of ingredients people usually put in it. I struck gold and found so many different examples, and this recipe is what I put together inspired by all those recipes. It has very few ingredients but the taste is complex and delicious and it was such a hit. I will definitely be making this again and again. Did I mention that it is super easy and allergy friendly and vegan and gluten free and just all around a good recipe?

I highly recommend this recipe.

Easy Scallion Rice Recipe- Gluten Free,  Vegan, Soy Free

Ingredients:
1 1/2 teaspoon grated ginger
4 cloves garlic
5 cups cooked rice
2 tablespoons oil
5 scallions
1 teaspoon toasted sesame oil
1/4-1/2 teaspoon salt (or to taste)

Instructions:
1. Grate your ginger and garlic cloves.

2. Heat a wok or pan with oil, then add the ginger and garlic until the garlic starts to change color (don't cook too long or it will burn).

3. Add the cooked rice, making sure it is crumbled up, and mix it until heated thoroughly.

4. Chop up 5 scallions, both the whites and greens, and add them to the rice.

5. Add sesame oil and salt to taste.

6. Cook until the scallions start to wilt.

7. Serve topped with sesame seeds if desired.

  1. I want to try this but not too sure about the ginger. I consider that to be a spicy flavor and I don't do well with spicy stuff.
