I like to process it in a steam canner (like a water bath canner but you use less water). My friends and I put up 250 quarts of applesauce this year. All from free apples gleaned from back-yard trees that people didn't use. Roast at 425-450 F until they are soft and mushy and the whole house smells yummy. Let them cool, then peel (the peel will slide right off) and mash with a fork or potato masher. Plus it crushes it. Makes it super easy! But you don't get the added nutrients in the peel.
