Easy Vegan Mock Chopped Liver Pate

This is real chopped liver, not my fake stuff,
but it looks and tastes the same, so why not?
I first at this dish at my friend's house and fell in love with it. Imagine my utter surprise when I found out that it has but 4 simple ingredients and is so easy and frugal to make! This tastes like chopped liver pate, if you've ever had it, and unlike most mock chopped liver recipes, is completely vegan and frugal.

Mock Chopped Liver Pate


Ingredients
1 large eggplant
2 large onions
Oil (as needed)
Salt (to taste)

Instructions
1. Peel and cut the onions into rings. Saute them in a large pot with oil until they start to brown. Set aside.
2. Peel and cube the eggplant. Divide into two and saute in batches in a large skillet until they're fully cooked and starting to brown. You'll need a decent amount of oil to stop it from sticking as the eggplant will absorb much oil in the cooking process.
3. If desired, layer between paper towels, cloth napkins, or cheesecloths to absorb the excess oil.
4. Blend well. Add salt to taste.

Serve on crackers, bread, or with crudites, or even eat it plain.

  1. when cooking eggplant, to avoid having to use large amounts of oil, I microwave it. you don't need any oil at all! or, you can add a measured amount of oil (e.g. one spoon) before cooking and toss it with the eggplant to coat, just for flavor. or, drizzle the eggplant with a measured amount of oil after cooking.
