Beer Battered Zucchini Fries Recipe- Gluten Free, Vegan

The other day I got a whole bunch of zucchini from a friend, and was trying to think of something different to do with them.
I decided to make "beer battered" zucchini fries.
Of course, what I made wasn't really beer battered, because beer is gluten usually, and we're a gluten free home. But there are so many alternatives to beer when making beer battered anything, including fish, chicken, or veggies.

These beer battered zucchini fries were very easy to make, without needing a lot of ingredients, and were a hit.

Beer Battered Zucchini Fries Recipe- Gluten Free, Vegan

Ingredients:
Zucchini
Flour- gluten free flours is what I use, often a mix of chickpea flour and brown rice flour, or all purpose gluten free flour mix, but if you/your family eats gluten, feel free to use regular wheat, whole wheat, or spelt flour instead.
Beer, kombucha, water kefir, ginger beer, or even water.
Salt
Garlic
Spices
Oil

Instructions:
1. Cut the zucchini into fry shaped pieces. Keep them on the thinner end so they won't be raw on the inside by the time the batter is cooked.

2. Mix the flour with your liquid until it is somewhat thicker than pancake batter, but not by much. Your liquid can be any of the aforementioned fermented drinks, or it can be water (or milk or buttermilk, depending on whether or not you're dairy free) and/or water with lemon juice.

3. Depending on what liquid you used, you'll want to spice up your batter. Salt is obviously necessary, but don't overdo it because you can always adjust it later. The more flavored your liquid, the less spice you'll need. I find garlic to always be a must in my "beer batter". Paprika, cumin, dried herbs, ginger, etc... are all other options you can use in yours.

4. Heat up oil in a frying pan. I usually make the oil an inch deep or so.

5. When the oil is hot, dip one zucchini fry into the batter, coating it on all sides, then drop into the oil. Fry until all sides are nicely browned, turning over as necessary.

6. Remove from fire and taste test. Does it need more salt? More spices? Adjust as needed.

7. Fry the rest of the zucchini dipped in batter.

8. If there is any batter left when the zucchini is finished, try deep frying the batter by itself in pancakes. They come out delicious.

  1. Wonder how this would do for an onion ring batter? Hubby has just decided he loves onion rings and orders them when he's out instead of French fries. Think I will have to try it. Even as a fish batter, might just be good too.
