Stuffed Dates Recipe- Healthy Mock Candy Bar

While I make good food and lots of it, sometimes I just feel like I need something extra, and I start hunting around my house, looking for something to eat. I can't put my finger on what specifically I am looking for; all I know is my mind is telling me "junk".
I tried dark chocolate, which I always keep in the house. Wasn't cutting it for me. Wasn't satisfying my craving.
Tried popcorn. Didn't do the trick either.
I even went and bought potato chips. That sorta did the job, but not even entirely.

So I took to facebook, looking for ideas of things that might satisfy that desire for junk, without actually being real junk.

I got so many great ideas of things to do, but one of them inspired me.


It was a homemade rolo knockoff, made with dates, peanut butter, chocolate, etc...

But was a lot of work.

And when I want junk, it usually is late at night when I'm not exactly in the mood of working hard and messing up my kitchen.

I just want something quick to eat that tastes yummy and satisfies my craving.

So I decided to do things the lazy way.

Make stuffed dates.

With peanut butter.

And chocolate.

Sounds harder and fancier than it is.

It takes a few seconds to make, and yes, I finally got it! It totally suits the cravings I was getting, and even gives me the feel of eating a candy bar.

The dates are sweet and chewy, the peanut butter is smooth and creamy. Salt gives that saltiness I'm craving, and the chocolate chunks give it that slight crunch that finishes it off.

To make it- simply take the seeds out of a date (or a couple), spoon in a little bit of all natural unsweetened peanut butter (or other nut butters or sunbutter), sprinkle it with a drop of salt, and then stick in two tiny pieces of dark chocolate (homemade chocolate is fine)- or you can even leave out the chocolate if you want.

Now the biggest problem is...

I ran out of dates when I made the above plate to photograph for this post.

Can't have that, not when dates are just so perfect for this.

  2. This looks really yummy! I wonder how it would taste with a prune or a dried fig? I'm definitely going to try this. When I get a craving for "junk" it usually ends up being some dark chocolate chips--just 5-6 will do--but this looks like something more substantial that will satisfy the candy bar craving like you describe. I'm gonna try it with a prune since I have some on hand, along with almond butter since I don't eat peanut butter. :) Thanks so much for the recipe/idea!
