Miso Glazed Chicken Wings Recipe- Gluten Free, Refined Sugar Free and Delicious

I love chicken wings! They are my favorite kind of chicken for a variety of reasons. I love crispy chicken skin, and wings are the highest ratio of skin to chicken as far as I can tell, but even better is their very low cost. Not only are they cheap per pound- locally I can generally get them for 64-89 cents a pound, but they are even more so once you factor in the percentage bone to meat, I end up paying just $1 per pound of actual meat, vs the next cheapest (other than gizzards)- chicken breast on sale- sold at $2.59 a pound - where I pay $2.85 per pound of meat. (Compare that to a whole chicken's price per pound of meat- $5.15, when I buy it for $2.07 a pound, the typical price I am able to find it here,

I wanted to make something delicious and crispy and different for my chicken wings, so thought to make miso glazed chicken wings. I make miso glazed salmon heads and they are delicious, so why not with chicken wings?

If you are vegan, feel free to put this glaze on anything you'd like, whether tofu or veggies or who knows what- it is just delicious.


Miso Glazed Chicken Wings Recipe- Gluten Free, Grain Free, Refined Sugar Free and Delicious

Ingredients:
4 lbs chicken wings
1/2 cup miso (I use my dad's homemade miso, but any will do; make sure to use gluten free miso to keep yours that way)
1/4 cup jaggery syrup, honey, coconut sugar, maple syrup, date syrup, white sugar, or whatever other sweetener you want
3 cloves garlic
1/2 inch knob ginger

Instructions:
1. Chop the garlic and ginger up small.

2. Mix well with the miso and sweetener.

3. Rub all over the chicken wings.

4. Bake at 350 for two hours. After 1 1/2 hours, pour off the liquid (save this- awesome gravy!) and spread out onto a lined baking sheet and return to the oven so that it can crisp up.

  2. how does you dad make miso? would love a recipe. all i've seen locally in stores is very dark miso, and I'd love to know how to make light/white miso. thanks!

  3. I absolutely adore chicken wings! I usually marinate it with soy sauce and sugar but I am greatly interested in using your recipe. I know you use homemade but there are so many different types of commercial miso that I get overwhelmed - would you recommend a stronger flavored miso or one that's mellow?
