Raw Carrot and Beet Salad Recipe- AIP, Paleo, Vegan


My mom is not an easy person to feed. Since she has Hashimotos, an auto-immune thyroid disease, among other things, she is on a combination of diets that make it hard to find foods that are safe for her to eat. She is not only paleo, she's on the GAPS diet as well, which means no sweet potatoes or potatoes or starches, as well as the auto-immune paleo protocol- no seeds or nuts of any kinds, no nightshades, etc... and doesn't eat cruciferous vegetables or onions or garlic or most fruit or sweeteners. If you can imagine, finding foods that she can eat that are tasty is quite the challenge. Due to this extremely strict diet, my mother has been forced to become very creative in the kitchen, and this beet and carrot salad that she makes fits her diet but is delicious enough that it is a worthwhile addition to any kitchen, special diet or not. 
This recipe is made with root veggies, which are seasonal for the winter, making them low cost to serve them at this time of year, as well as readily available.
My kids and I all love this salad, and hopefully you will too.

Raw Carrot and Beet Salad Recipe- AIP, Paleo, Vegan

Ingredients:
1 extra large or 2 large beets
3-4 medium carrots
2 tablespoons olive oil
2-4 tablespoons lemon juice
1/2-1 teaspoon salt
1-2 tablespoons packed chopped fresh mint

Instructions:
1. Peel and grate your carrots and beets. I usually grate it with the larger holes on my grater, but grating with the smaller holes also works great (and that's how my mom usually does it).

2. Add the rest of the ingredients, other than the mint, and adjust to taste. I honestly usually don't measure the ingredients for this recipe, just add a glug of lemon juice and a smaller glug of olive oil, then add salt a pinch at a time.... but I did measure out precise amounts to write down this recipe.

3. Finely chop your mint, and add it to the salad, mixing well.

4. Serve immediately if desired, or leave it to marinate. It tastes just as good a few days later, but the colors do bleed the longer it sits.

  1. Looks amazing. A friend from Ukraine made a raw beet salad for us. I never wrote down exactly what went into it, but it was basically grated raw beets with a LOT of fresh crushed garlic and mayo. He thought of it as a relish, but we ate it like a salad.

  3. I make the easiest salad with tinned beetroot, tinned peas & corn & tinned asparagus. Dressing is mayo & orange juice mixed together to the consistency of dressing

  4. Btw this salad is so tasty it really doesn't need a dressing e.g. oil and lemon. It's naturally sweet and delicious.

  6. I make a salad with grated cooked beets and grated raw apples. No dressing needed. But if you wanted a small amount of vinegar and sugar is also good in this salad.
