Easy French Toast Casserole Recipe


I know, this isn't much to look at, but the taste is wonderful, and you want to try it out!


Stale bread. You ever have it at home? I know that, despite my trying to avoid it, its a regular occurrence in my home. And I don't want to waste that stuff. But there's only so much bread crumbs I want to use. French toast is a great way to use up stale bread, but the standing, dipping, frying, repeat is something that can be both time consuming and tedious. Here's a way to get the same great taste without all the work- French toast casserole. Or, as my kids told me "It tastes like French toast, but looks like cake". That was before they told me "Right, you're making sure to put this on your blog? Because it's that good and needs to be shared."

While I used this specific amount this past time, the recipe is totally flexible. Play around with it. Use a different sweetener, use less or more sweetener, use fewer eggs, use non dairy milk, add fruit- the sky is the limit.

Easy French Toast Casserole Recipe

Ingredients
16 cups stale bread
4 cups milk
8 eggs
2 cups sugar
2 teaspoons vanilla
2 teaspoons cinnamon

Instructions:
1. Break or cut your bread into bite sized pieces.

2. Mix the rest of the ingredients in a bowl and mix together until semi uniform, then add in the bread. You can add the crumbs too, none needs to go to waste. Let the bread soak in the liquid so it has time to absorb it.

3. Pour it into a 9x13 baking pan.

4. Cover it, and bake at 350 for 30 minutes. Uncover it and bake it 15 minutes more.

  2. I make something like this! I keep my bread in slices, layer them in a baking dish, then pour the egg mixture over the top and let it soak the bread. Then I sprinkle a butter/brown sugar mixture over the top before I bake it. Same idea, but I think mine is a little less work since I don't tear up my bread. And yes, it is delicious. I am getting hungry for some right now! :)
