Pureed and frozen, it can be a nice way to add flavour and moisture to a cake, much like applesauce. You'd think all the flavour would be drained from it, but it still works. When they're in se...I do this with fresh dates. When they're in season they're super cheap where I live. I peel and pit them (since when they're fresh the skin is papery but firm and comes off relatively easily, plus it makes for a smooth puree), then process them into a smooth puree. I then freeze it flat in freezer bags.
