Mustard Thyme Chicken Recipe- Gluten Free, Grain Free, Sugar Free

I had a bunch of chicken that I wanted to cook up, but wanted something different than my usual random spices that I just throw on. I wanted something flavorful, but without any added sweeteners or processed sauces, etc...
I remembered having artichoke once with mustard and thyme, and remembered that mustard with thyme was a winning combination. An internet search revealed that mustard thyme chicken is an "official thing", though many of those recipes had honey in it, and I'm nearly out of honey and didn't want to use it up on chicken that could also be tasty without the honey.
I made up this recipe, played around and made a delicious sauce for the chicken, adjusting it to taste until it was just right. I then smeared it on the chicken parts and baked it until fully cooked. Perfection!
This is the perfect recipe for people on a low carb/sugar free diet, GAPS (so long as you use a GAPS legal mustard) or even if you're just looking for something delicious to serve for supper.

P.S. The drippings from this chicken tastes superb on rice!

Mustard Thyme Chicken Recipe- Gluten Free, Grain Free, Sugar Free

2 heaping tablespoons dijon mustard
1 tablespoon oil
1 tablespoon lemon juice
1 teaspoon salt
1 teaspoon garlic powder
2 teaspoons thyme
8-10 pieces of dark meat chicken or whole chicken breasts, or more equivalent amount of chicken cutlets

1. Mix together all the ingredients other than the chicken.

2. Slather the sauce onto the chicken.

3. Bake for an hour or so, or until the chicken is fully cooked, if using larger piece of chicken. If using cutlets, bake until they just change color- between 10 and 15 minutes usually- otherwise they'll overcook.

  1. Hi Penny,

    Two things:
    - I find mustard is really delicious and useful, but, unfortunately, my husband is allergic to it. I wonder if you have any ideas for a substitute that tastes similar. I figure that if anyone has any clue about that, it would be you.
    - You seem to bake your chicken in a pyrex dish. Do you have any tips for cleaning pyrex easily? All I own for oven baking is pyrex and I mostly use disposable pans instead, because it is such hard work to clean. I don't really want to use disposables, but I can't spend endless time scrubbing.

    1. I don't know of any mustard replacements... Something spicy and tangy, so i'd include vinegar and maybe hot pepper or ginger.... Google says horseradish might work. Who knows...
      As for cleaning pyrex- I find just soaking it in water, and then using steel wool or some other metal based scrubber thing works best. Alternatively, you can line pyrex with parchment paper.
