Delicious Curried Peas Recipe- Vegan, Gluten Free, Sugar Free

It's past my bedtime, but I didn't want to leave you without a post for today. So, without preamble, here's a yummy curried pea recipe I invented myself when I decided to make an Indian meal for myself and a friend but didn't really have much variety by way of veggies with which to work, but I did have peas. The recipe came out delicious. Hope you like it as much as I did. It is vegan, gluten free, dairy free, grain free, sugar free, GAPS legal, etc...

Delicious Curried Peas Recipe- Vegan, Gluten Free, Sugar Free

Ingredients:
2 tablespoons oil (I used palm, but any non strongly flavored oil would work for this)
1 large onion
3 cloves garlic
6 cardamom pods
10 cloves
1 cinnamon stick
1/2 teaspoon mustard seeds
1/2 teaspoon cumin
1/2 teaspoon dried ginger
5 tomatoes
1/2 cup coconut milk (I use homemade coconut milk)
1- 1 1/2 teaspoon salt
3 1/2 cups frozen peas (~1 lb bag of peas)

Instructions:
1. Chop the onions and mince the garlic.

2. Saute onions and garlic in oil. When starting to get golden, add the cardamom, cloves, cinnamon, mustard, cumin, and ginger, and cook for 2-3 minutes.

3. Add the tomatoes, coconut milk, salt, and peas.

4. Cook covered until the tomatoes have completely fallen apart and the peas are fully cooked.

  1. I've never made curried peas, but I do make curried potatoes. And the other day I had a squash, coconut cream, chicken broth and curry, and made a soup.

    Curry is just so versatile!

  2. This is awesome I would make this for sure. It is easy ( my thing) and I always have frozen peas and often other veggies in my freezer for things like this. I have never made home made coconut milk but have just had a look at the link here. I am going to give that a go as well. Thanks!
